    It’s all about the balance with this brilliant golden IPA.

    Pours with a frothy white head that is accompanied by a pleasant hop aroma which has hints of pine and fresh lemon.

    An excellent blend of northwestern hops and a touch of biscuit malt give Almanac IPA a refined bitter finish which is dry, refreshing, and very easy to drink.

    A slight sweet fruit flavor which slowly fades to a pleasant tartness that compliments the bready malt flavor of this full bodied wheat beer. Similar to biting into a fresh apricot this beer is velvety soft with subtle sweet and tangy flavors.

    Our craft beer quest brings us through Dusseldorf with Barnstorm Ale. We’ve taken a Maibock recipe (sweet, bready malts combined with herbal,spicy Noble Hops) and brewed it with American ale yeast to create a crisp, hop forward Altbier. Well balanced and medium bodied with a slightly dry finish, Barnstorm is the perfect match for wherever your adventures take you.

    Style originated in 16th century Germany as a wheat beer that was bottled and then buried in warm ground to ferment again. This created a sour and acidic beer that could be mixed with fruit syrups and other styles of beer & became the most popular alcoholic beverage in the region by the 19th century. We have created this beer in the traditional method of allowing the wort to “sour” before fermentation. You will notice a light straw color body and a clean white head. It has a sour lemon flavor, slight fruitiness and puckering mouth feel

    We start with the juice from the same apples we use for our Hard Apple Cider and add a hundred pounds of fresh berries. Strawberries, blueberries, blackberries, and raspberries in this favorite cider and a tart berry flavor that is refreshing and crisp. Our berry cider usually packs a punch at 7.0 ABV, but is deceivingly light in body and taste.

    We serve it in a 12 oz goblet so you can appreciate the fresh berry and apple aroma and the beautiful color. Perfect on a summer day and a great alternative to our fantastic beer varieties.

    Go BIG with your “sipping sessions,” when sitting down with this IPA. It’s copper in color, and kissed with an aroma of citrus & pine. The Big Sipper packs a punch to your palate thanks to its Simcoe hops, and provides a good finish courtesy of the Citra and Chinook hops included in the brew – we call it the Big Sipper, you’ll simply call it “GOOD!”

    Named for the Cascade Mountain Range in the great Northwest, this single hop pale ale speaks the language of endeavor. With a citrus, floral aroma, and brilliant white head; the crisp lemon and grapefruit essences dance on your tongue like a springtime snowdrift. Easy drinking and even-handed, this is a Pale Ale for the scenic route.

  • Cascara Cider
    Cascara Cider
    ABV: 7.2

    Cascara, which means “husk”, “peel” or “skin” in Spanish, is the dried skins of coffee cherries. These pulped skins are collected after the seeds (aka, coffee beans) have been removed from the cherries. In this form the cherries have a spicy tobacco character.
    Our friends at Villa Myriam Coffee brought us a 50 lb bag of cascara and asked if we would be able to use it to make a beer or cider – why not? We decided to throw the cascara in a fermenting batch of dry cider and see what happened. After fermentation the cider aged on the cascara for two weeks before being kegged. The final product is a very dry cider with notes of black pepper, tobacco and a hint of spicy pepper which should pair very well with a sweet cheese or even compliment a spicy entrée like Pad Thai or Coconut Curry.

    Dark chocolate color and a crisp light tan head compliment the malty, vanilla chocolate aroma that you will notice immediately. The beginning notes of vanilla transition to chocolate cocoa notes & a roasted malty finish. This stout is brewed with a variety of dark malts and lactose sugar which is added at the end of the brewing process. Whole cocoa nibs are added to the fermenter at the end of fermentation & the beer is allowed to age on the nibs for 10 days, to pick up the dark chocolate character.

    Named for its origin on the Gose River in Eastern Germany, this historical style dates back to the Middle-Ages, our homage to beers of another time. Whereas traditionally this may have been blended with additives like herbed liqueur, our rendition calls for cucumber, a perfect late summer flourish of flavor. Tart and sweet with a hint of melon, the back end is crisp and refreshing, a bright beverage for a sunny summer afternoon.

    Our Delicious Golden Dry Cider starts with apples from Washington state and is then fermented with Champagne yeast. Not as sweet as its relatives, this is a mature cider that has been allowed to develop and gain complex flavor all while retaining a mild apple flavor in the finish. Suggested Food Pairings: Blue/Muenster Cheese, Rib Eye Steak, Pork Belly, Caramelized Pear and Vanilla Bean Ice Cream.

    Fermented in 8 red wine barrels with saccharomyces (yeast), lactobacillus, brettanomyces, and pediococcus,  this beer was left alone for one year  and then blended to perfection to create the complex fruity and sour flavors that dominate your palate.

    A fresh melody of pine and citrus hop boldness, with a balanced aroma of fresh baked bread. Light copper colored beer with dense bright white head, strong piney & citrus flavor with subtle lingering bitterness. Malty sweetness is subtle but pleasant with a dry finish. Moderate carbonation & medium body, this is a boldly yet flavorful and surprisingly drinkable IPA that is overall well balanced.

    Named for our distaste of goatheads, whether in bike tires, puppy paws or gardening hands, with a play on the historically required “ador” ending of doppelbock names. This reserve beer has been aging happily since the spring. Doppelbocks are traditionally stronger than single bock beers in flavor depth. A Bavarian specialty first brewed by Munich monks and revered as a staple beverage, thus it was lovingly referred to as “liquid bread.”

    Minute-4 is a lightly smoked lager in honor of the Carlsbad Fire Department’s world-record setting Scott Firefighter Combat Challenge. An homage to those that run to danger, this classic style has an aged wood character with a smooth warmth that finishes with a faintly sweet aftertaste. Rarely are smoked beers more than a novelty, yet this is one to drink in celebration, in remembrance, or for no occasion at all. Common yet rare, uncommon men accomplishing incredible things, here’s to you gentlemen.

An ode to fruity IPAs everywhere, this is one that a first time pale drinker can enjoy while the hop-head can take a vacation with.

    Inspired by the locally grown herbs at Farmer’s Daughters Farms in Corrales, NM we bring you summertime in a glass. Our friends at Farmer’s Daughters harvested 13 pounds of sweet basil and mint which we added to the fermentation of our hard apple cider to create a unique summer cider. The fresh garden herbs and delicious apples blend together, bringing you a crisp and refreshing beverage that’s sure to cool you off on our hot summer days.

  • Traktoberfest

    A German Oktoberfest-style lager, the Märzen was historically  brewed in March (hence the name) and lagered in cold caves throughout the summer. German malts and Noble hops are brewed to produce this copper colored, medium bodied bev with hints of toasted malt.

    Named for its renegade style and California roots, this is a doubly hopped version of our Farmer’s Tan Red Ale, which we began brewing with the popularity of an Almanac & Farmer’s Tan cocktail (known to regulars as a ‘Red Eye’). This Cali Red Ale has a hoppy aroma and slight bitter flavor that blends exceptionally well with the caramel and malty goodness of a quality red ale. For those who like unique balance and an abundance of flavor, cheers to the coast with the most.

  • Vulgar Display of Porter

    Brewed with the Dark Side Brew Crew for their 5 year anniversary, this Baltic Porter (a sub-category of ‘Strong European Beer’) exemplifies characteristics of its creators: nearly opaque, complex, prominent, yet smooth. Brewed in the tradition of countries bordering the Baltic Sea, in comparison it makes other Porter styles seem young in character. There are layers of coffee, molasses, and Mexican chocolate that the tongue is left to ponder.
