Style originated in 16^th century Germany as a wheat beer that was bottled and then buried in warm ground to ferment again. This created a sour and acidic beer that could be mixed with fruit syrups and other styles of beer & became the most popular alcoholic beverage in the region by the 19^th century. We have created this beer in the traditional method of allowing the wort to “sour” before fermentation. You will notice a light straw color body and a clean white head. It has a sour lemon flavor, slight fruitiness and puckering mouth feel.
