After 3 years of aging in cabernet oak barrels we decided to take the edge off the sour by blending it with a young oatmeal stout to better balance the sour and bring forward more malt character. The barrel aging process has produced sherry like qualities that balance well with notes of black cherry, chocolate and toffee. Both sweet and sour this blended ale creates a complex mouth experience that is a surprise every time.
